We’re big fans of dessert. So much so, we’ve come up with an ingeniously acceptable way of having dessert for breakfast – introducing the lemon meringue pie smoothie!
This tasty take on a classic dessert offers up an incredible 41g of protein per serving at under 500kcals. Perfect for setting you up for the day ahead and keeping you full through until lunch.
Smoothie Ingredients
For the cream
½ scoop Pea or Whey Protein Classic Vanilla
250g Greek/coconut/soya yoghurt
1 ripe banana, peeled, sliced, and frozen
1tbsp chilled full-fat coconut milk
1/4 cup fresh lemon juice + zest of 1 lemon
1 tablespoon pure maple syrup or to taste
1/4 teaspoon ground turmeric
Optional Garnishes:
Lemon slices
Crushed meringue
For the base
½ cup homemade 6-minute Granola * (see previous recipe)
Smoothie Method
Add all the ingredients to a food processor and process for 2 to 3 minutes or until smooth and creamy.
To Assemble -
Layer the ingredients: granola, lime and banana cream, and top with crushed meringue.
Serve immediately.
