Now the cold weather has well and truly set in, more of us are reaching for a warming breakfast over cold cereals and smoothies. Porridge may be the bowl of choice but we have something a little different if you’re started to run out of different porridge toppings.
You may be familiar with cauliflower rice and cauliflower vegan pizza bases, but how about cauliflower porridge?
This Strawberry Cauliflower Porridge recipe might sound a bit strange but, trust us, once you’ve tried Oat-free Porridge, you won’t want any other kind!
Vegan Oat-free Porridge Ingredients
1 scoop Pea Protein Mixed Strawberry
425g floret of cauliflower
3 tbsp coconut flour
160ml water
200ml almond/coconut milk
1 tsp ground cinnamon
1 tbsp natural sweetener (we used monk fruit but feel free to use any kind of natural sweet)
Toppings
½ cup toasted hazelnuts
Strawberry Compote:
2 cups frozen strawberries
Natural sweetener (taste to adjust the sweetness)
Method: Cook frozen strawberries in a saucepan over medium-high heat. As it cooks and soften slightly you can use a wooden spoon to break up the fruit, add sweetener. Cook until it starts to thicken slightly and the fruit is soft but still in pieces.
Oat-free Porridge Method
- Add cauliflower, water, coconut milk in a sauce pan. Cook the cauliflower over medium heat for 10 minutes until soft. Stir occasionally.
- Remove from the heat. Add the vegan protein powder, natural sweetener, coconut flour and cinnamon. Stir until well combined.
- Pour the cauliflower porridge into two bowls and serve with the pre-made strawberry compote and toasted hazelnuts. Enjoy!
