This easy Nuts and Seeds Brittle is a great recipe option that you can make ahead of time and keep in your draw for when those hunger pangs come-a-knocking. Packed with protein and nutrients from the nuts and seeds mix, it’s a far better option than the stale slice of birthday traybake that Sue from accounts brought in two days ago.

Nut Brittle Ingredients
2tbsp Pea Protein Vanilla or Pea Protein Chai Spices
50g almond, chopped
40g pecan, chopped
1tbsp sesame seeds
1tbsp pumpkin seeds
4tbsp butter/vegan butter
2-3 tsp natural sweetener*
1tbsp almond milk
*we used erythritol
Nut Brittle Method
- Heat a pan and melt the butter. Then, add the natural sweetener and mix the two ingredients until they’re well combined.
- Add all the nuts, seeds and protein powder. Mix until well combined. Press it down evenly in a container and place in the freezer for about 30 minutes.
- Take out from the freezer and break into smaller pieces. Serve. Enjoy!
There you have it, an easy and satisfying snack that was made for the office. Though it’s just as good as a yoghurt topping, hiking snack or for dipping in hummus.
