Falling for fall? This vegan protein-packed pumpkin porridge will set you up for your favourite walks through the crisp leaves.
Ingredients
- 60g rolled oats
- 1/3 scoop Pea Protein Classic Vanilla
- 1/2 cup pumpkin puree, cold
- 1/2 cup almond milk
- 1/3 cup of water
- 1 tbsp coconut cream
- Maple syrup to taste
Optional toppings
- Coconut flakes
- Pepitas
- Banana
- Almond butter
- Cinnamon
- Coconut cream
How to make a protein pumpkin porridge
- Place rolled oats water, and milk into a saucepan and simmer on medium heat for 5 minutes
- Add pumpkin purée, coconut cream, maple syrup and protein powder
- Stir well
- Serve with coconut flakes, pepitas, cinnamon and a scoop of coconut cream, almond butter, and banana
