During the summer you'll want to avoid turning on your oven and warming up your already hot house. This classic summer recipe will be a hit with all the family. Although the method is simplistic, the flavours certainly aren't! Get stuck in to this Pea Protein Pasta Salad.
Ingredients
- 250g dried fusilli pasta
- 1/2 cup olives
- 1 cup cherry tomatoes
- 60g Feta cheese
- 2 handfuls rocket leaves
Sauce Ingredients
- 1 scoop Nutristrength Unflavoured Pea Protein
- 2 handfuls spinach
- 1/4 cup fresh basil
- 1 ripe avocados
- 2 tbsp olive oil
- 1 squeezed lime
- 2 garlic cloves
- 1/2 cup water
- Salt & pepper for seasoning
Directions
- Bring a large pot of salted water to a boil. Cook the pasta according to the instructions.
- While the pasta cooks, make the sauce:
- In a food processor, combine the protein powder, garlic, basil, spinach, lime juice, oil, avocado, and water and process until smooth, stopping to scrape down the bowl as needed.
- If the sauce is too thick, add a bit more oil
- Season with salt and pepper to taste
- Drain the pasta
- Add the cherry tomatoes, rocket, feta cheese, olives
- Mix with the avocado sauce and stir until combined
