Protein Ginger Cookies with Date Butter

Tis' the season to bake! These gorgeous ginger protein cookies will snap you right into the festive spirit. This recipe celebrates our classic vanilla whey protein powder that can be used in all sorts of recipes this season.


Protein Cookie Ingredients



  • 1 scoop Whey Protein Classic Vanilla

  • 3/4 cup butter, softened

  • 1/3 cup raw sugar/coconut sugar or any other natural sweetener

  • 2 eggs, room temperature

  • 1/4 cup molasses

  • 2-1/4 cups oat flour or all-purpose flour

  • 2 teaspoons ground ginger

  • 1 teaspoon baking soda

  • 3/4 teaspoon ground cinnamon

  • 1/2 teaspoon ground cloves

  • 1/4 teaspoon salt


Date butter ingredients



  • 150g soft butter

  • 100g soft pitted dates

  • 1/2 tsp ground cinnamon

  • 1tbsp maple syrup

  • Pinch of salt

  • In a small food processor, blend the butter, dates, maple syrup, cinnamon and salt. Chill until needed, will keep for up to a week


Ginger Cookie Recipe



  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and molasses

  • Combine the protein powder, flour, ginger, baking soda, salt and spices; gradually add to the creamed mixture and mix well

  • Roll into 1-1/2-in. balls

  • Bake until puffy and lightly browned, 10-12 minutes. Remove to wire racks to cool
