This summer may not have been what we were expecting and we’ve had to forgo many of our favourite things, spin class with friends, holidays abroad, even picnics in the park. Now some of the restrictions are lifting we know you want to make the most of the final sunny summer days, so we have a perfect picnic recipe for you.
These tasty easy scones are perfect for making up quickly ahead of an impromptu, socially distanced picnic in the park. They are also made using bananas and minimal amounts of flour, so you can keep hold of your precious baking reserves. Give it a try and you could be tasting delicious homemade scones within the hour!
Scone Ingredients
4 ripe bananas
1 scoop vegan protein (I used Pea Protein Classic Vanilla)
75g coconut flour
40g butter/vegan butter, melted or coconut oil
1tbsp peanut butter
100g almond/coconut milk
1tsp baking powder
+ optional dried blueberries or raisins
Scone Method
1. In a medium bowl, mix all the ingredients together.
2. Take a tablespoon of the mixture and scoop it onto a baking tray. We got nine scones.
3. Bake about for 25-30 minutes. Enjoy!
