The first lockdown in the UK saw us all baking banana bread and the second has seen us turning our hand to tasty cinnamon buns! As cinnamon buns have always been a favourite of ours, we have developed a Christmassey take on this gooey treat. Made with our delicious Pea Protein Chai Spices, they smell amazing – just like Christmas!

Give them a go, each bun gives you over 5g protein and under 200 calories so it’s a Christmas treat you don’t have to feel guilty about.


Cinnamon Bun Ingredients

For the dough

1 scoop Pea Protein Chai Spices Flavour

6 tbsp vegan butter

2 packets instant yeast

2 cup unsweetened plain almond milk

2 tbsp coconut sugar
atural sweetener

1/4 tsp salt

2 ½ cup (640g) Organic Wholemeal Self Raising Flour


For the filling

4 tbsp vegan butter, soft

1/4 cup coconut sugar
atural sweetener

2 tbsp ground cinnamon (to taste)


For the frosting, optional

½ scoop Pea Protein Chia Spices Flavour

4 oz cream cheese, softened

3 tablespoons unsalted butter, softened

¾ cup powdered sugar

½ teaspoon vanilla extract


Cinnamon Bun Method

  1. Preheat the oven to 190°C and grease a baking dish.

  2. In a large bowl, heat almond milk and butter until melted. This should be warm, not hot, in order to activate the yeast. Sprinkle the yeast on top of the warm milk mixture and let it sit for five minutes.

  3. While sitting, mix together the flours, protein powder and salt in another bowl.

  4. After the milk has sat for ten minutes, whisk in the coconut sugar.

  5. Add the wet ingredients to the flour and stir until well combined. Cover with a tea towel and wait until the dough doubles in size, about 45 minutes.

  6. While the dough is rising, prepare the cinnamon sugar mixture by mixing coconut sugar, cinnamon and butter together in a small bowl.

  7. Flour a large surface and tip the dough onto it. If the dough is too sticky, add more flour. You should be able to form it into a large rectangle shape. Then evenly spread the cinnamon sugar mixture on top of the cinnamon dough.

  8. Roll tightly from one side to the other, keeping it nice and tight the whole time.

  9. Once in a long roll, cut in half and cut each half into 8-10 rolls and place them into a greased baking dish, spiral side up. Brush with melted butter.

  10. Bake the rolls for 25-30 minutes or until slightly golden.

  11. While baking, prepare the frosting by blending all of the ingredients together in a food processor or by whisking until smooth.

  12. Frost the cinnamon rolls when still warm, or once cooled if preferred.
