When you’re out and about it can be easy to give into temptation and pick up a chocolate bar but, if you want a health(ier!) take on a classic, try our Tumeric Protein Bounty recipe!

Ingredients
For the turmeric layer
250g mixed seeds
50g almonds
1 sachet/scoop of Pea Protein Classic Vanilla
1 tsp maca powder
½ tsp ginger powder
½ tsp cinnamon powder
2 tsp turmeric powder
30 ml coconut oil, melted
50 ml agave syrup
60 ml water
For the coconut layer
½ cup ground almonds
2 cups shredded coconut
30 ml cacao butter or oil, melted
40 ml monk fruit sweetener (or other natural sweetener)
1/3 cup of almond milk
Topping -
Melted chocolate mix (mix unsweetened cocoa powder, coconut oil and agave syrup)
Protein Bounty Method
To make the turmeric layer
- Put half the mixed seed mix (125g) into a food processor along with the almonds and blend into a flour.
- Transfer the flour mixture into a bowl and then add the remaining mixed seeds, pea protein, maca powder, turmeric, ginger, cinnamon, agave syrup, coconut oil and water.
- Mix the ingredients until they all start to bind together.
For the coconut layer
- Add all the coconut layer ingredients to a bowl and mix until it starts to bind together.
To assemble
- Press the turmeric layer dough into a square/rectangle cake box.
- Remove the layer from the box whilst retaining its shape and repeat the process with the coconut layer.
- Place the turmeric layer on top of the coconut layer.
- Spread the melted chocolate mixture on top.
- Place into the freezer for at least an hour.
- Take out of the freezer and slice into squares. Enjoy!
