With summer temperatures starting to rise, why not try some of these delicious summer ice pops?
They're quick and easy to make, naturally sweetened and loaded with high-quality protein! This recipe tells you how to make 6 ice pops, 2 of each of 3 different flavours.
Chocolate Raspberry
Ingredients:
100 ml Rebel Kitchen Coconut Milk with Cacao
20g Nutristrength Whey Protein Roasted Cocoa
1 handful frozen berries
1 tsp. cocoa powder, unsweetened
50g full fat coconut milk
Method:
1. Combine all of the ingredients (except the raspberries) in a blender and blend until smooth.
2. Transfer the mixture into a bowl and add the frozen berries, mix well.
3. Pour the cream into popsicle moulds and freeze for 30 minutes before inserting the popsicle sticks.
4. Place them in the freezer for at least 2 hours to set until firm.
Toppings (optional)*:
3 squares sugar free white chocolate, melted
2tbsp frozen raspberries (crushed)
Chai Sesame
Ingredients:
180 ml Rebel Kitchen Coconut Milk with a Chai Spice Blend
20 g Nutristrength Pea Protein Classic Vanilla
25 g light tahini seed butter
1tbsp. ground flaxseed
25 g full fat coconut milk
Method:
1. Combine all of the ingredients in a blender and blend until smooth.
2. Pour the mixture into popsicle moulds and freeze for 30 minutes before inserting the popsicle sticks.
3. Place them in the freezer for at least 2 hours to set until firm.
Topping (optional)*:
2 squares sugar free dark chocolate 85%, melted 1 tsp. Sesame seeds
Coffee Peanut Butter
Ingredients:
100 ml Rebel Kitchen Coconut Milk with Coffee
20 g Nutristrength Whey Protein Classic Vanilla
2 tbsp. peanut butter
¼ tsp. maca powder
Method:
1. Combine all of the ingredients in a blender and blend until smooth.
2. Pour the mixture into popsicle moulds and freeze for 30 minutes before inserting the popsicle sticks.
3. Place them in the freezer for at least 2 hours to set until firm.
Toppings (optional)*:
3 squares sugar free dark chocolate 85%
1 tbsp. granola
*toppings: You can also drizzle with melted chocolate for a different effect. it's great to add seeds, nuts, or chocolate chips too if you desire.
Remove popsicles from the freezer and immediately dip in the chocolate. Place melted chocolate in a small mug. Dip frozen popsicles into melted chocolate turning it to coat, and immediately coat the bars with granola, seeds, berries etc. Hold the ice pops for a minute or two until the chocolate hardens then serve immediately or place popsicles back in the freezer.
