How cute are these raw Christmas pudding balls! With a choice of Pea Protein or Whey Protein Isolate, you can make them vegan or non-vegan, it’s completely up to you! A tasty mix of fruits, festive spices and gluten-free flour, they’re a healthy Christmas snack or alternative pudding option.
Ingredients
200g mixed dried fruits (raisins, sultanas, blueberries, cranberries) 8pcs dried, pitted prunes
40g Whey Protein Isolate Unflavoured or 30g Pea Protein Vanilla Flavoured
50g ground almond
100g gluten free oat flour
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
1 vanilla pod or 1 tsp vanilla bean paste
1 tbsp coconut oil, melted
Juice of 1 orange
Juice of ½ lemon
1 pinch of salt
water ( add a little water if the dough feels too dry)
For the toppings:
100 ml coconut yoghurt (I used Coyo Coconut Milk Yoghurt)
Juice of ½ orange
1 tsp maple syrup or agave syrup (optional)
Fresh Cranberries, cooked or dried goji berries Fresh mint leaf
Raw Christmas Pudding Method
1. Add dried fruits, prunes to the food processor and pulse until chopped.
2. Add a mixture of the remaining ingredients to the food processor and grind until the mixture starts to clump together. Add water if the dough is too dry or add almond flour if is it too wet.
3. Roll into small balls. Place into the fridge about 10 minutes.
4. Meanwhile, make the “white coating”. In a small bowl mix coconut yoghurt, orange juice, maple syrup together.
5. Spoon a little creamy mixture over the tops of the puddings and garnish. You can decorate with cranberries, goji berries and mint, anything you like.
