Double Rich Chocolate Protein Cookies

Double Rich Chocolate Protein Cookies, need I say anymore? This is one for the whole family to enjoy. You can dip this in an ice cold glass of milk or in a hot freshly brewed tea. Simply put, these are the kind of cookies you will want to hide from everyone else or if you're feeling generous, share.

This recipe is vegan, gluten free with no sugar added, parents you can rest assured that your kiddies can enjoy with no shock reactions or sugar high!


Protein Cookie Ingredients

1 Can Of Chickpeas, drained, rinsed and peeled

2/3 tbsp Water

1 Cup + 1 tbsp Nutristrength Classic Vanilla Pea Protein Powder

3/4 Cup Of Chocolate Chunks


Protein Cookie Method

1. Preheat oven at 350 degrees.

2. In a food processor or blender; puree chickpeas, add the water and protein powder then blend the mixture again. This should form a ball of dough, if it is still crumbly add a tiny amount of water a teaspoon at a time. Process again and it should quickly form a dough ball.

3. Remove the dough from the food processor and mix by hand with chocolate chunks either on a counter top or in a mixing ball. Once you are satisfied with the combined product, roll into 1 inch balls and place on top of an oven proof tray lined with non-stick parchment paper. Bake for 15 Minutes, remove from oven and cool a little; serve with a cold glass of milk or your beverage of choice.
