Hello everyone! Szabina has been busy preparing more delicious recipes for you guys to enjoy at home! We recently had our stand at the Be:Fit event in Angel this past weekend and a lot of you who came by to our stand had an amazing tasting session throughout the duration of the show.
Here's our (green) Banana Spinach Mini Pancakes! Don't forget to stack them up high!
Ingredients
1 Egg
3 Egg whites
120g Banana
15g Pea Protein Classic Vanilla
5g Coconut flour
1/2 tsp Baking powder
60g Spinach (2 big handfuls)
Topping 1tbsp Coconut yoghurt (recommended Coyo Coconut Yoghurt) 1tsp Green Pumpkin Butter
Method
1. Heat a pan over low-medium heat
2. Blend all ingredients together with an electric hand blender. Set aside for 5 minutes.
3. Bake it in a non-stick pan, flip after 2-3 minutes on each side. (Make small pancakes)
4. Top with coconut yoghurt and pumpkin butter. Enjoy!
